Kale. The newest fad in “super foods”. I don’t know about you, but I was wary of this veggie, well, because it is just so darn….cruciferous. I kept seeing the health benefits touted all over the internet and my favorite food blogs, so I figured I would grab myself a bunch and tackle the leafy mass (conquer might be the better word :)). I heard that roasting was the way to go (if you don’t enjoy it’s slightly tough texture and spicy bite when raw) and decided to give it a whirl! Tossed with some olive oil and salt, roasted until just browned and crispy, these babies are seriously addicting! What a pleasant surprise! Ha! They aren’t as good for you as it is raw, but at least this way I eat it, right?! I would love to hear about your favorite ways to enjoy this super food! Share away!

I found this bunch of Black Kale at market, so I snagged it! Gorgeous!
The most common (at least for my stores/markets) is Curly Kale which also works well for this! *Side note: I usually cut/tear the leaves off of the stems with the Curly variety for these chips.
Preheat oven to 250 degrees, F. Toss kale with extra virgin olive oil, spread out evenly on a baking sheet and sprinkle with salt. Place in preheated oven for approx. 30 minutes, or until slightly browned and crispy.
