Foodie Friday: Spring Peas with Mint.
As you saw on this month’s 10 on 10, the weather here has been ahhh-mazing! Warm, sunny and just what we needed. Spring weather means local spring veggies and I was lucky enough to find some fresh spring peas and mint earlier this week…yum!! I have never made this little salad before (it was a bit of an experiment!), but I have to say it is certainly one of my new favorites…just a few ingredients and voilá! a bright and tasty side dish.

Spring Peas with Mint
Ingredients:
1 lb. fresh spring peas, sugar snap peas (in shell), or frozen peas, in a pinch.
3 Tbsp. butter, more for serving if desired.
6-7 fresh mint leaves, can be adjusted to taste.
Salt & Pepper
Directions:
1. Melt butter in saucepan over medium heat, add peas and sauté until tender, but still a bit firm. Approx. 2 minutes. Remove from heat.
2. Finely chop mint leaves and sprinkle over peas. Season with salt and pepper and serve with more butter, if desired.
3. If you would like more of a pea pureé, or something that won’t/can’t roll off of your plate, then feel free to lightly mash and serve that way…I bet it would be tasty spread on crusty grilled bread!
*Note: After pictures were taken, I added crumbled goat cheese (feta would work too!) and am looking forward to it as a light lunch. Cheese makes EVERYTHING better! :)
