Foodie Friday: Pumpkin Bread.

Ok, so I know that pumpkin is typically associated with fall and winter…those cozy, crisp evenings we all look forward to after a long summer. However, I have been craving this delish bread for the last few weeks and FINALLY gave in and made it….I do not regret it. Not for a SECOND. :) This recipe comes from my Mom and I have an original copy that she typed out on our very first word processor computer. (Wowza, do I sound old or what?! :)) It is a special one to me because I remember her making it so often for us…the smell of the spices coming together and then the way the house smells while it’s baking. Plus, that crust that it has when coming out of the oven, dense but tender center, oh my, it’s so tasty. Mmmmm! Love you, Momma! Pumpkin Bread-6144

Mom’s Pumpkin Bread


4 cups, unsifted AP flour

3 cups, sugar

2 tsp. baking soda

1 1/2 tsp. salt

1 tsp. baking powder

1 tsp. cinnamon

1 tsp. nutmeg

1/2 tsp. cloves

1/4 tsp. ginger

1 – 15oz can Pumpkin

1 cup, oil

4 eggs

2/3 cup, water


1. Preheat oven to 350 degrees F.

2. Spray or butter (2) 9x5x3″ bread loaf pans.

3. Mix dry ingredients thoroughly in a large bowl.

4. Beat pumpkin, oil, eggs, and water together. Add to dry ingredients. Stir just until dry ingredients are moistened. Do not over mix!!

5. Divide the batter among the loaf pans.

6. Bake loaves 1 hr. to 1 hr. 15 minutes, or until knife comes out clean, or until tops spring back with lightly touched.
