Foodie Friday: Snack Time!
I am a total snack fan. If it wouldn’t lead to monstrous weight gain, I would snack alllll day long….and I mean all day. :) Today, I thought I would share one of our favorites…stove-top popcorn. This is so easy and just as addictive. (Don’t say I didn’t warn you!!) We go through popcorn like it’s our jobs, you all must give it a try. Out with the microwave kind and in with this stuff…trust me when I say you will never go back. Oh, and yes, this is at my desk and I am ALSO enjoying my salty with some sweet – who doesn’t love Swedish Fish?! FAVE.

Ingredients (one, generous serving):
1/2 cup un-popped, loose popcorn
1/3 cup good quality olive oil
Grated Parmesan Cheese
Pour olive oil in 3 qt. sauce pan (pot) with lid. You can use a larger or smaller pot, this is just the one we use and therefore the ratio of ingredients that works for us! Our 8 qt. stock pot requires 2/3 cup of oil and 1 cup of kernels! (Just FYI!)
Turn heat on to medium/medium high (again, something you will have to play around with depending on how the popcorn pops for you) and add in popcorn. Shake to distribute kernels evenly and immediately cover with lid.
In a minute or two the popcorn will begin to pop! When about half of the kernels have popped, feel free to carefully shake pan back and forth leaving lid on (the heat being generated underneath is what makes the popcorn pop!), to circulate! Listen closely, until the popping slows to 1 every second or two.
Remove immediately from the heat and pour into large bowl. For your first few times, it is best to take it off sooner than later, there is nothing worse than burned popcorn! Sprinkle salt on while hot (I add grated parmesan cheese as well, though feel free to omit.). Yummmm-O! :)
