Foodie Friday: Fresh Corn & Edamame Salad with Garlic Shrimp.
Happy Friday! :) Now that the warmer weather has started to show its shy face, I have been craving light, healthy, and fresh meals that are FAST to whip up. This salad with edamame, sweet corn and shrimp is so easy and totally delicious. (Since local corn isn’t available yet, I went with frozen! Definitely a step down from the “real” stuff, but allowed me to have it now instead of in a few months! :)) Some crusty bread and you are all set! Fresh Corn & Edamame Salad with Garlic Shrimp.
Ingredients:
1 bag frozen edamame
1 bag frozen sweet corn (3-4 ears of the fresh stuff! Just be sure to cook them in boiling water before cutting off of the cob.)
1/2 cup feta cheese, crumbled
1 lemon, zested and juiced
Chopped cilantro (or you fave herb)
Good quality olive oil
1 lb., large uncooked shrimp, peeled and de-veined
4-5 cloves of garlic, peeled and finely diced
Salt and pepper
Directions:
1.) Heat a generous drizzle of olive oil in sauté pan over medium heat. Toss in minced garlic, cook for 1 minute. Add shrimp (seasoned with salt and pepper), and cook until pink. Remove from pan.
2.) Steam edamame and corn in steamer over boiling water for 2-3 minutes or until warmed through. Remove from steamer to large mixing bowl. Stir in feta cheese crumbles, lemon juice and zest, drizzle of olive oil, herbs, and salt/pepper to taste.
3.) Serve, topping salad with warm shrimp and side of crusty bread! Enjoy!
