Foodie Friday: Roasted Chickpeas.

Ohhhh, the holidays. Full of fun and every sweet, overly tempting treat imaginable. I mean those peppermint brownies are going to get stale if you don’t buck up and eat them for breakfast, right?! :) Bottom line, eating well this time of year can be tough. Fo sho. Recently, I discovered these salty, crunch, healthy chickpea loveliness and could not wait to share! They are soooo easy, inexpensive, and best of all – totally delicious! With a bit of crunch and seasoned just how you like, these simple little beans become the life of the party (or your mid day snack! :)). I hope you enjoy!! Happy Friday!! xo


Roasted Chickpeas


1 can of chickpeas, drained and rinsed

Drizzle of Extra Virgin Olive Oil

Sea Salt

(Any other seasons you like! Suggestions: Old Bay, Creole, Cinnamon Sugar)


Preheat oven to 350 degrees (F). Pour rinsed and drained chickpeas on a paper towel lined baking sheet. Dry chickpeas well and remove towels. Drizzle oil over chickpeas and use your hands to make sure they are all evenly coated. Sprinkle with sea salt. Place in preheated over for 25-35 minutes, or until browned and crunchy. Serve warm or store in an airtight container after cooling. Enjoy! xo
